With cooler weather coming, soups, stews and casseroles are good to take in a thermos. If that's too tricky, wraps are excellent and they're a good way to sneak in extra veggies like shredded carrot. Salads work if you pack the dressing separately. Pasta is a good stand-by; it's easy to make and it's satisfying.
What about just making sandwiches on buns? I know I'd rather have a bun than bread when it comes to lunch. Bread is so boring.
Perhaps pizza, or you can make a wrap instead of a sandwich. Or you can seperately back the ingredients for nachos and let him build them for lunch, that might be fun. There is always lunchable, however I don't think they are very healthy. Also salad is great, but you'd have worry about keeping it fresh. Last but not least how about going old school and sending soup?

Ask your son what he would like to take to school to eat for lunch.
Whole wheat pasta and tomato sauce is what I bring to work a lot. It's very healthy, and easy to make.
