This isn't like what my grandmother made, b/c I wouldn't eat the crap with the nice giggle skin on top, but when I met my husband, his mother made this banana pudding and I fell in love....believe me....
2 large boxes vanilla pudding mix(instant)
5 cups very cold milk (whole)
beat together till starts to thicken. Add:
8oz sour cream
8 oz cool whip(buy a 16 oz tub use the rest later in recipe)
Mix well all together. Lay out layer of vanilla wafers and cut up bananas to your desired amount. Add half the mixture. Repeat wafer and bananas, add rest of mixture. Top with remaining cool whip and crush up some wafers. This is such a great recipe and it is sooo simple. I know you will love it and also know that you won't be slaving over a hot stove and risk the gelatinous skinning effect on the top of the old fashion kind!!! :O)
"Home-Style Banana Pudding"
Ingredients-
3/4 cup granulated sugar
1/4 teaspoon salt
1/2 cup all-purpose flour
3 cups milk, low fat or whole
3 large egg yolks
3 tablespoons butter, room temperature
2 teaspoons vanilla
vanilla wafer cookies
3 to 4 bananas, ripe but firm
sweetened whipped cream or whipped topping
banana slices for garnish
mint sprigs, optional
Preparation-
In a bowl, combine the sugar, salt, and flour; stir to blend. Slowly stir in milk until smooth. Pour into the top of a double boiler over simmering water. Cook, whisking frequently, until the mixture begins to thicken.
In a small bowl, whisk the egg yolks; gradually whisk in about 1 cup of the slightly thickened hot milk mixture
Layered Banana Pudding
3/4 cup sugar
1/8 teaspoon salt
1/3 cup self-rising flour
2 cups milk, low fat or whole
2 eggs, separated
2 tablespoons butter, softened
1 1/2 teaspoons vanilla
vanilla wafer cookies
3 bananas, ripe but firm
1/4 cup sugar
1/2 teaspoon cream of tartar
PREPARATION:
Combine 3/4 cup granulated sugar, the salt, and the self-rising flour in a bowl.
Slowly stir in milk. Put mixture in top of double boiler over simmering water and cook until mixture begins to thicken.
Beat egg yolks then briskly stir a small amount of the hot mixture (about 1/2 cup) into them. Add egg yolk mixture back into the hot mixture in top of double boiler and stir in butter and vanilla. Cook until mixture thickens again.
Place a layer of vanilla wafers in an 11x7-inch baking dish (or other shape 2-quart shallow baking dish). Add half of the sliced bananas. Pour half of pudding mixture over banana layer. Repeat layers, ending with remaining pudding. In a mixing bowl beat egg whites until foamy; gradually beat in 1/4 cup granulated sugar and cream of tartar. Beat until stiff peaks form. Spread meringue over pudding. Bake at 350° until browned completely. Remove from oven. Serve hot or cold.
