Various family members and friends and I have begun working with a local ministry on plans for an extended-need food pantry focusing more on basics such as whole grains, fruits and vegetables and other items that will store well over long periods of time, and that are available in greater and less-expensive quantities that prepackaged or processed foods (and natural foods are better for us anyway, right?). But we're running into anecdotal evidence that there seem to be a high incidence of celiac disease, aka gluten sensitivity, in parts of the Midwest (we're in Indiana), and so we're trying to figure out what grains would be gluten-free yet would be good nutritional matches in terms of specific nutrients, yet without gluten. For example, I've been reading that some people who are sensitive to gluten can eat spelt but not wheat. But since we're looking to buy grains in large quantities, we're looking for advice on what to buy and what to avoid.

Yes It takes a long time to get ahold of whats safe for ppl with celiac. For instance my mother can eat rye bread... i believe threw trying she found this was fine... so it will always depends on you each the individual. I also believe that at wallmart they list on the foods there if it is gluten free(and its very easy to spot it).. they have to. I dont know any other stores that do. So with that you could go by your basic nutritional guide and get the gluten free version.

The grains that celiacs cannot have are wheat, barley, and rye. This would include all forms of these grains including spelt. All other grains are safe except for the risk of cross contamination. Oats will often be listed as "off limits" for celiacs because it is usually contaminated with wheat. Buckwheat (kasha: a type of buckwheat), corn, millet, and quinoa are all safe.
