This is one of my favorite desserts. Just double it:)
LEMON MELTING MOMENTS
1 pt (2 c) heavy whipping cream
1/2 c. sugar
juice of 4 lemons
grated zest of 2-4 lemons
1 TB. sweetened, condensed milk
8-10 whole fresh strawberries (garnish)
In a well-chilled bowl, beat all ingredients (except berries) until very thick. Divide among 8-10 parfait glasses and chill. Garnish with whole strawberry to serve ...........also good with a Pepperidge Farm piroutte cookie stuck into it:)
I don't have the exact recipe anymore - but it was made in a 9 X 13 inch pyrex casserole.
Prepare 1 small box of instant pudding in pistachio, vanilla or banana flavor - whichever you prefer - and chill 1-2 hours.
Make a grahm cracker crust (crumbs with a few tablespoons of melted butter) and cover bottom of glass pan. Cover evenly with 1 can drained crushed pineapple. Slice 2 bananas and distribute evenly in a layer over the pineapple. Spread pudding evenly over the banana layer. Spread Whipped Cream or Cool Whip over the pudding and sprinkle with crushed pistachios, if desired. Cover and Chill until serving.

The traditional desserts for Cajun food are bread pudding or banana's Foster. If your temps are anything like ours, bread pudding is too heavy after a spicy meal in this heat. Banana's is somewhat labor intensive....so how about a lighter, easier substitute for one or the other??
Instead of bread pudding....
Store bought angel food cake, torn in pieces layered with berries, drizzled with chocolate ice cream topping and served with a pretty squirt of canned whipped cream. Layer this in a trifle dish, or a glass bowl for pretty presentation.
Instead of banana's Foster...
Slice bananas into a bowl and toss with lemon juice to retard discoloration. Sprinkle with cinnamon and a little sugar (brown if you like), cover and refrigerate.
To serve, spoon banana's over vanilla ice cream and drizzle caramel ice cream topping and a squirt of whipped cream.
Either one can be made ahead early in the day and refrigerated. Cool and simple....but fancy enough for company!!

Do some ice cream with berries and some type of chocolate sauce. Very easy!
