Paste paper to make a Father's Day Card (you pre-cut shapes and have your child paste them on a card), then they can color it, stamp it, or paint it. Bake and eat some cookies, muffins, etc. Bounce on the bed (my 2 yo son LOVES this)! Build a fort and hide child's stuffed animals in it. Play drums on the pots and pans, see what kinds of different noises different "sticks" make (like spatula, wooden spoon, metal spoon, whisk, etc.). Fingerpaint with chocolate pudding (100% edible and safe). Build a ball maze with toilet paper/paper towel/wrapping paper tubes. Go to the mall, my son loves to go before they open and he can run around like crazy. Visit a local museum. Let them play in the sink or tub with some cups, funnels, basters, etc.
Got any empty boxes hanging around that are big enough for the child to fit in? Kids love boxes, the child can paint, color, or glue things onto the box. he can pretend its a boat, car, plane, etc.
You could make a tent or a fort with blankets & pillows and play "camping" by spending the day inside it with flashlights reading books, singing songs & even eating lunch inside.
Read, color, draw pictures, Playdoh, build a fort with blankets, put on music and dance, sing songs, go over the alphabet, play dolls or cars, build with blocks, play hide and seek.
in the summer I let my son put on his bathing suit and sit in the bathtub with cool water. we bring in the radio and instead of bath toys, i let him use pool toys like a small beach ball. if its hot or humid enough, i will put on my bathing suit and get in too. he loves to be able to play and not have to wash his hair.lol

playing with clay; something fun for him to get his hands on.
watching a kiddy show; gives you two time to cuddle. (maybe even a nap)
bake cookies; yum.
good luck & have fun.
