I walked out of my credit union this morning with a loan check to pay off the remainder of my student account balance at my school. I walked to the car with check in hand, for sure had when I got in the car. And got out of my car with all the papers in hand and walked straight to my house when I got home. I just looked and the check is not there and I for sure remembered leaving with it. I live alone so I know no one took it, and I locked all my doors so I know no one broke in and stole it. The only possibility is that I dropped it walking from my car to the door and someone found it.
The check was made out to the University and had me as the memo line. Can someone cash this? Will my credit union be able to track it if they did?

It is highly unlikely that someone would be able to cash the lost check. If you lost it going from the credit union to your car it may be possible that someone found it and returned it to the credit union. Check with the credit union first. Go to your credit union today and put a stop payment on the check you lost and have them reissue a new check to replace the one you lost.
Go back to the bank and request a reprint of the check. Have them put a stop payment on the check. I'd back track and see if someone returned the check.
The only way someone could cash it would be to use a check account under the University business name.
