A dogs ears often take up to a year to decide if they will stand or not. You may have to be patient. One day they are down, the next up they go.
I'm not sure exactly what you mean by changing color. Some dogs lighten as they get older, but they don't "change" color.

They will stand up eventually, if it is a purebred Yorkie. Yes, they may change colors as they grow.
to get your Yorke's ear to stand up you have to get them crop at the vet and i don't think so that thay change colors unless its a mix Yorkie.
