I dont believe the process of hydrolysis is destroying it but I also read that it can be destroyed at 1000 degrees. But someone else brought up a good point by saying matter cant be destroyed but change form. What happens when its heated to 1000 degrees? Does it just change to energy?

"hydrolysis" would not be the correct term for the destruction of water.
Water is a specific molecule made of hydrogen and oxygen. Anything that changes that molecule into something else necessarily "destroys" the water.
Electrolysis is the easy way to do that via electrical current, which removes the hydrogen atoms and leaves H2 and O2 separated.
Above 1000 degrees, a small fraction of the molecules will gain enough energy for the H-O bonds to break spontaneously. But this is no different than any other method of separation.
