How about a crostada? Its a sort of one crust pie, with a fruits filling. No eggs!
Crust:
1-1/4 cups flour
1/2 teaspoon salt
1 tablespoon sugar
4 tablespoons butter
4 tablespoons solid vegetable shortening (Crisco)
Ice water
combine flour, salt, and sugar.
cut in butter and shortening until mixture looks like cornmeal.
add just enough water until dough starts to come together.
flatten into a disk, wrap, and refrigerate about 30 minutes.
(or you can cheat and buy a ready made crust, from the canned biscuit section of the grocery store...lol...easier, quicker and just as good)
For the filling...pear, apples (i like both)
3 medium size fruits
1/4 cup sugar
1 heaping tablespoon flour
1/2 teaspoon cinnamon
Pinch of salt
peel, quarter, remove seeds and thinly slice your fruits.
mix the sugar, flour and cinnamon together, and toss the fruit in it.
Almond topping
1/2 cup slivered or sliced almonds
2 tbsp butter
melt the butter in a skillet, add the almonds, and let them get hot enough to sizzle and begin to look like they are turning brownish. Pull the pan off the heat and drain the excess butter from the almonds by laying them in an even layer of paper towels.
Now, put out one crust (you really should use parchment under it, but if you don't have it, don't worry about it) on a cookies sheet. Carefully places the slices fruit on the crust...leave and inch or so of the outside edge untouched....in a circular pattern. Overlap the layers about 1/2 inch (less if possible), in smaller circles as you make your way to the center. If there is any remaining sugar in the bowl, sprinkle it evenly over the top of the fruit. Now, sprinkle the almonds on top of it.
When you're done, turn up the edges of the crust, sort of like making a ruffle of the edge, but be very careful not to press it down on the fruit...leave it lifted, it will come down during the baking. Brush the edge of the crust (don't get it on the fruit!!!!) with milk to keep it from browning too much....and bake.
Cheesecake is the first thing that came to my mind! It does contain dairy, but it is definitely an eggless recipe. I have made this recipe 3 times, and it always comes out beautifully, it tastes soooo good! :)

(Serves 10-12)
Ingredients

2 ½ cups digestive biscuits, crushed
For the filling:
500g ricotta cheese
500g cream cheese, at room temperature
1/3 cup lemon juice
1 ½ cups caster sugar
1 tbsp cornflour
1 1/3 cups double cream
1 ½ tsps vanilla extract
½ cup white chocolate, melted
1 cup blueberries, dusted with a little plain flour
Method for the base:
1. Combine the crushed digestive biscuits with the melted butter and mix thoroughly.
2. Firmly press the mixture into a greased 10 inch springform tin.
Method for the filling:
1. Beat together all of the ingredients (excluding the blueberries) until it has thickened. Kurma suggests not to overmix this.
2. Pour ¾ of the mixture on top of the crust and scatter on the blueberries. Pour the rest of the cheese mixture over the blueberries. This method protects the blueberries from burning in the oven and the flour they are dusted in will stop them from sinking to the bottom of the cheesecake during cooking.
3. Bake at 180 degrees Celsius for 1 ¼ hours until set (I left mine for 1 hour because my fan oven cooks things a little quicker).
4. Allow to cool and refrigerate for at least 8 hours.
5. Cut into (extra) large wedges and serve
If you only measure in either cups or grams/mls, just type into google something like (for the lemon juice, for example) How much is 1/3 cups in mls? Its 80 mls, by the way :D
Oh and I have frozen this recipe and served a week later (defrosted obviously!) and it did still taste lovely, but the biscuit base had lost some of its crunch, so maybe not such a good idea if you aren't keen on soft biccies! :)
I guess this is one of the best eggless dessert recipe for you to make. no need to bake but easy to prepare and share with your loved ones.
Easy Chocolate Mousse Without Eggs
Ingredients:
* 1 cup heavy whipping cream
* 3 Tbsp unsalted butter
* 3/4 cup semi-sweet chocolate chunks or chips
* 1 Tbsp granulated sugar
Directions:
1. Place 1-2" of water in the bottom half of a double boiler. Bring to simmer over medium heat. Melt chocolate and butter in upper half, stirring occasionally. Remove from heat once melted. Set aside.
2. In a chilled metal bowl, whip cream until soft peaks begin to form. Add in granulated sugar and whip for an additional 10-15 seconds.
3. Gradually stir in one spoonful of whipped cream into chocolate to temper. Continue to fold in whipping cream to chocolate until thoroughly combined.
4. Transfer to a martini glass, wine glass or other serving glass and chill for at least 15 minutes. Garnish with fresh berries, strawberries or whipped cream and chocolate shavings.
try this out. you can add some ingredients if you want to, because it will make the recipe unique and tasty.
Tiramisu is a delicious Italian dessert that I make for my family. It is really tasty and very cheap and easy to make. It does not take a lot of time either. (some people do include raw egg, but a lot also do not, you can leave the raw egg out it is not needed) I also leave it out from a health point of view. you need : whipping cream sponge trifle biscuits vanilla sugar (or normal sugar) coco powder for dusting mascarpone cheese coffee (All of these I buy from sainsburys or tesco) you boil up some strong Italian coffee, and leave it to cool. meanwhile in a mixer or blender whisk the whipping cream with the mascarpone cheese and the sugar until the cream is very thick. Get the sponge finger biscuits out, you need to dunk them one by one in the coffee and arrange one layer of them on the tray, covering every bit of the tray. (you may have to cut some in half to cover the corners) then spread on the top of the coffee soaked biscuits, one layer of the cream mix, then repeat twice, so you should have 4 layers. then get a fork to decorate by putting criss cross line imprints on the cream, and then sprinkle some cocoa powder on top for dusting. (i personally break up some cadburys flake bars and put them on top too) cos i love chocolate, but it;s not traditionally part of the recipe. Leave it in the fridge to set then serve. Even those who do not like drinking coffee will love this dessert. In my family everyone loves it even the coffee haters. Because it is a mix of flavours and gives a nice taste. you can taste the coffee but it is not overpowering. In the summer it is nice on a hot day. Enjoy!
